Finca Deborah is a coffee farm in the Los Pozos micro-region of Volcan, Panama. It produces some of the best coffees in the world and is one of the most awarded coffee farms on the planet. Grown an altitudes of 6500 ft and in the dense rain forest, these conditions lead to very complex and amazing tasting beans. Processed by a way called Carbonic Maceration – the fruits are hand selected, then pulped, with the results going into a stainless steel tank for an extended period of time, the PH, temperature and CO2 are monitored carefully. Once the targets are met, the coffee is placed in shaded raised beds, where it will remain away from UV light until ideal moisture levels are achieved. This creates a beautiful flavor profile that is sweet, smooth and elegant with a perfect balance of sweet and acidic
