Coming from the Potosi farm in Colombia this Sidra coffee variety is a real treat. The Sidra variety of coffee is a newer variety that is gaining popularity amongst the coffee championships. It is similar to Geisha in that it needs shade to grow well and is more delicate but Sidra can have a more complex flavor profile when compared to Geisha.  Grown at just under 6000ft above sea level in the Caicedonia region.  This bean is harvested at peak ripeness and then honey processed, meaning the outer layer of the cherry is left on the bean and allowed to dry with the beans. This creates a sweeter bean, almost honey like which is where the name comes from.
